This chocolate is created from single variety 'Rugoso' cocoa beans, grown in Nueva Guinea in the south of Nicaragua.
The beans have been fermented for 4-5 days then sun-dired on wooden beds for 7-8 days covered with banana leaves. When the beans are hand-sorted, they ensure lass than 2% are wasted.
This chocolate from J Cocoa has been hand-tempered by White Rabbit, and has flavour notes of light raisins and sultanas, with gently spiced background flavours.
