Made with Gran Nativo Blanco beans, which are tiny, very rare and ultra premium, this chocolate is grown by expert smallholders in Piura and is renowned for its delicate aromas and low bitterness.
The Native White beans were hidden for more than a century before being rediscovered by San Juan de Bigotas in 2008 and re-cultivated by a co-operative of cocoa farmers in the region. The beans have been fermented for 5-6 days covered with banana leaves, sun-dired on wooden beds then here in the UK it is expertly roasted, winnowed, stone-ground and conched for up to 100 hours.
This chocolate from J Cocoa has been hand-tempered by White Rabbit, and has flavour notes of sweet pear drops with depth of flavour from malty and jammy characteristics.
