This Mayan Red Trinitario Cacao variety is unique to Honduras and was almost extinct when it was found in 2006 within three neighbouring farms in the Honduran jungle. The trees are spaced 3x3m apart to ensure that they can live off the nutrients of the soil, minimising the use of fertilisers or pesticides.

The cocoa trees are nursed intensively when they are young to keep fungus and insects at bay, and in the dry season large leaves are laid around the foot o the trees to ensure the correct level of humidity.

The beans are collected, fermented for 5 days and dried in the sun for 7-8 days.

This chocolate from Bare Bones has been hand-tempered by White Rabbit, and has flavour notes of full-bodied and luxurious with notes of fudge, double cream and raisins.

We take extra care packing & sending your parcel using a courier service, ensuring your chocolate arrives fresh, unmelted and in the best possible condition. We do not post on Fridays to avoid your parcel sitting in a warehouse over the weekend.


How should I report a breakage or missing item?

Please take a photo of the damaged product (or contents of your parcel), and postal packaging if there is visible damage, and email us on info@whiterabbitchocolatiers.co.uk within 3 days of receiving your items.

Will you refund my damaged products?
We deal with each incident on a case-by-case basis, usually we are able to replace the damaged items promptly. We always try to make good on purchases as our first priority.

How long before I get my money back for a refund?
We will notify you if / when you are eligible for a refund.

Your item will be refunded at your purchase as long as you have included your order number on the returns note and sent it with the item. If the order number is missing it will be refunded at the current price.

Our name comes from the stone carving of a ‘pilgrim rabbit’ in St Mary’s Church, a hidden fourteenth century gem and part of the rich heritage of Beverley, the beautiful Georgian town where our company was founded. The carving is said to have inspired the ‘white rabbit’ character in Lewis Carroll’s ‘Alice’s Adventures in Wonderland’, and together they add the magical ingredients of fun and delight into our Chocolate Wonderland.
